of the killer tomatoes!
I harvested about 20 pounds of tomatoes from our garden last week. Now, when I say “garden”, I’m not talking about your average back yard garden. We have a 1/4 acre plot at a community farm. And when I say “we” I really mean my husband. My husband has worked his ass off all spring and summer to grow this beautiful food for our family. I get to cook it and eat it.
We have SO many tomatoes. It’s hard to believe the rest of the country is having bad luck with their tomato crops. We have… oh, probably 30-40 plants in our garden and they are all doing great. They are collapsing under the weight of the fruit they are bearing. T is going to have to stake them up again this weekend. So anyway, what to do with all of these tomatoes? Soup!
We found this recipe. It sounded yummy and easy enough. We had enough tomatoes to make a quadruple batch.
It’s sooooooo yummy! The white beans and bacon give it a fair amount of protein so it makes a great lunch or dinner. It’s toddler friendly too. Well, my kid likes it anyway. He gobbles it up and then requests “more soupy-soupy!”.
It’s so rewarding to eat food you’ve grown yourself. I’m really looking forward to harvesting our fall crops. Red cabbage, onions, potatoes, carrots, beets… yum! I think we’re going to try to root cellar them. I predict a lot of pot roasts and stews on the menu this fall.

At least I have a new explanation to offer people when they ask how come we have so many kids!

Lucky you that H. is wearing a bib! My kid has refused them for months now. *sigh* Today he covered himself in neon pink yogurt (yes, against my better judgment there - yogurt should not be this color).

When the tomatoes really get ahead of you, I discovered long ago that washed tomatoes could be packed whole in a freezer bag and stuffed in the freezer. Used in a sauce later in the winter, there will be the most incredible taste of summer.
